
Caribbean Chickpea Wrap

Ingredients
- 6 Cups Beans, garbanzo, canned, low sodium, drained and rinsed
- 1 1/2 Cups Hummus, premade
- 1 1/2 Cups Carrots, peeled, shredded
- 1/2 Cup Onions, yellow, chopped
- 1/2 Cup Raisins
- 4 ½ Tablespoons Limes, juice
- 2 Tablespoons Seasoning mix, jerk
- 1 Tablespoons Sugar, white, granulated
- 1 Tablespoons Salt kosher
- 6 Cups Cabbage, red, shredded
- 3 Cups Mango, frozen, chunks, defrosted and drained
- 12 Tortillas Flour, whole grain, 12”
Instructions
- 1. For chickpea filling: To a large mixing bowl, add garbanzo beans, hummus, carrots, onions, raisins, lime juice, seasoning mix, sugar and salt. Lightly mash to bring the mixture together, leaving some chickpeas whole to create texture in filling.2. For service: On a 12″ tortilla, portion ½ cup cabbage, 3/4 cup garbanzo bean mixture, and 1/4 cup defrosted and drained mango. Wrap tightly and serve.
